Established in 2015, Rocca Toscana Formaggi is run by the Canti family who has been doing business in cheese for over 60 years (already as Canti sas-srl since 1956 and then with Canti & Rossi srl since 2004) and is now managing the dairy in Roccastrada, in the heart of Tuscan Maremma, which has always been famous for its quality products.

The Canti family had been aging for decades sheep cheeses that were produced according to their own recipes in selected dairies. They took a step forward with Rocca Toscana Formaggi by producing their own cheeses.

Rocca Toscana Formaggi has various plants:

  • production plant in Roccastrada, Via Della Tana, in the heart of Maremma Toscana
  • headquarters in Arezzo, Via Puccini, 79/83 where the shipping warehouse is too
  • a warehouse in Casole D'Elsa, near Siena, where all the aging and different maturing of the cheeses take place
  • a warehouse in Valentano, Viterbo which is inside a tufa cave and is used for the aging of the renowned Grotta Cheese, aged according to the traditions of the Maremma Laziale

In total we have more than 5.000 sqm, and could process over five million liters of milk per year.

Our goal is to combine the quality of artisanal productions with the instruments, perspectives and methods of industrial management.

The special care for the raw material used, for the production and maturing techniques and for the management process (all plants will soon be certified throughout the supply chain - the plant in Arezzo Via Puccini already is), all aim to offer a wide and varied range of products: from fresh to aged cheeses, from cheeses with roots in ancient traditions, like the Pecorino Aged in Grotta or the Pecorino Toscano DOP, to innovating and exclusive cheeses which recipes derive from our own research and subsequent patent (Aged sheep cheese with D.O.C.G. Chianti wine, Aged sheep cheese with grappa) and up to a simple but very tasty cow and sheep cheese or sheep cheese produced also with various flavourings like pear, honey, etc.

Rocca Toscana Formaggi aimes to have long lasting relationships with its clients. That's why we are also willing to produce brand products either if they are already in our range or new products with an exclusive recipe by our clients.

At present we have over 80 cheeses in our range of produts. Here are our stronholds:

Pecorino Toscano DOP

Our production plant is located in the area of the Consortium for the Protection of Pecorino Toscano DOP and every day we process milk produced in farms registered for the production of Pecorino Toscano DOP young or aged. This cheese can also be produced in a GMO variation (Pecorino Toscano DOP Biologico) and as such is guaranteed either by the Consortium for the Protection of Pecorino Toscano DOP and the ICEA authority (Institute for Ethical and Environmental Certification). Can be portioned, even in fixed weight.

Organic cheese

  • Organic sheep cheese either young or aged
  • Organic sheep cheese aged in Cave
  • Organic Pecorino Toscano DOP young or aged
  • Organic sheep cheese with black truffles

are our organic cheeses produced with milk collected from organic certified farms which express the care for consumers as well as for the animals.
The certification by the ICEA Authority guarantees that milk derives from certified farms and products are controlled and certified.

Sheep cheese aged in caves

Rocca Toscana Formaggi proudly runs the plant where the original sheep cheese aged in caves was born and where it is still guarded, selected and aged in the natural tufa caves located in the area of the Pecorino Toscano DOP.

An exclusive aging that, thanks to the natural microclimate, temperature and humidity, gives to the sheep cheese a rare value in its organoleptic, olfactory and gustatory characteristics. This cheese won the gold medal at the "Alma Caseus" awards in 2016 (the only year we entered). The Alma Caseus in an award that qualifies the best and ancient Italian dairy traditions.

Flavoured sheep cheeses or aged in vase

Innovating and patented cheeses are a very important part of our production. We mix the ingredients in the boiler: cheese with pears, figs, honey, DOCG Chianti wine, grappa, black peppers or with Pistacchio Verde di Bronte DOP. Very appreciated is our “IL PIACERE”, cheese with black truffles, which recipe blances the delicate and special taste of truffles with the taste of milk.

Exclusive methods are used to age our cheese in tufa caves or ditch-like caves. We are the contract awardees to use the brand “l’Ambra di Talamello”, that was issued by the Talamello County to preserve the ancient Middle-ages tradition to age cheeses inside a ditch-like sandstone cave.
We also age our cheeses under juniper berries, marc, black pepper, weath, walnut leaves, olive leaves or hay.

Along with the above mentioned cheeses Rocca Toscana Formaggi produces young cheese as well as sheep and cow cheese.
